Pork taste Fishy tasting Bacon/Ham

Post by JaCoE » Thu Feb 14, 2019 6:22 pm

Question please.
Has anyone had any issues with Bacon and Ham, it's cured, tasting fishy?

The people that my show pigs went to are saying they can barely eat the bacon, and when making ham and beans it's awful. My bacon also smells after cooking of "fishy" and when eating tastes "fishy"

I fed Lindmans 685 and High Octane supplements.
Heavy weight, champ drive, fitter 35 and fitter 50

Any assistance would be appreciated. One of my customers brought it up to the butcher, and so I am(and the butcher) are trying to find the cause. If it was part of the processing(probably curing) or the feed? The meat that is "fishy" is only the cured meat bacon/ham. The sausage and pork chops and roasts are all fine.

If the rest of the meat is fine, and it's only the bacon and ham that tastes fishy, then I would think that points to the curing process. (Assuming that the customer also had the ham cured and not fresh). I've definitely seen differences in the cured products across processing facilities. I actually drive 3 hours each way to a processor because we like their sausage and cured items better.

I've also found that some customers are more sensitive to a curing process than others. Particularly if the customer is not accustomed to buying such items from a butcher vs. their grocery store. Our cured and smoked ham is much different than the butterball coming from the grocery store.

I agree with BerkBabe. Cured bacon and ham that comes from a processor has a different flavor than the stuff you buy from the store. I like it but my wife said that that bacon tasted like it was bad. She has never had fresh bacon before and just does not like the flavor of the bacon or sausage. Fishy, I have never had it come out fishy so I would suspect something else. But there surely is a different in flavor between store bought and a butcher.
