i dont want to sound dumb, but hwre is the chine located? is it a bone or cartilige?,

It is located on the top of the pig between the head and shoulders.

so if there is a fat pad covering this (bone) its ok for show?

You will only be able to see it if you hold a pig to long and there isnt enough fat over it or as it gets older
